The colour and shape of egg dumpling is similar to gold ingot. With this auspicious meaning, Chinese people love cooking egg dumplings in Lunar New Year. You can also make some and put them into the fridge. Then you can cook them whenever you want.

Step by Step Instructions

Step 1
Prepare the egg dumplings. Beat the egg, add the corn starch water. Mix together and set aside.

Step 2
Chop the green onion. Peel and mince the ginger. Rinse and chop the cilantro. Shred the Chinese cabbage. Cut the fish ball in half.

Step 3
In a bowl, mix together the ground pork, chop green onion, minced ginger, white pepper, corn starch, light soy sauce and salt.

Step 4
Brush some oil on the ladle and heat it up.

Step 5
Pour the egg mixture in the ladle and turn to form the egg skin.

Step 6
When the egg skin about half cook, add some filling.

Step 7
Fold the egg skin and use the chopstick to tighten the edge until the egg is fully cooked. Transfer to the plate.

Step 8
In a pot, add the chicken broth, fish ball and bring it to boil over high heat.

Step 9
Add the egg dumplings, Chinese cabbage and bring it back to boil over high heat. Reduce the heat to low, cover the lid and cook for 15 minutes.

Season with salt, sprinkle with cilantro and ready to serve.
