Easy Roast Pork Tenderloin

Step by Step Instructions

Step 1
Preheat oven to 220°C.

Step 2
Pat pork tenderloin dry and rub the salt, black pepper, cumin and brown sugar all over the pork evenly.

Step 3
Heat a frying pan over medium high heat and add a bit of olive oil. Sear the pork tenderloin on all sides, for 2 minutes per side, until golden brown.

Step 4
Remove pork tenderloin from pan and place on a baking sheet. Roast in oven for 12-15 minutes, or under cooked.

Step 5
For the sauce, add minced shallots to frying pan and sauté for 1 minute. Add in white wine and let reduce by 1/2. Turn the heat to low and whisk in butter. Season with salt and black pepper and sprinkle in chopped parsley.

Step 6
Take pork out of the oven and let rest for 10 minutes. Slice into pieces and serve with sauce.
