Easy Prawn and Butternut Squash Curry

Step by Step Instructions

Step 1
Slice the onion. Cut the tomato into pieces. Seed and julienne the red bird chili. Peel and cube butternut squash. Peel and devein the tiger prawns. Set aside.

Step 2
Heat oil in a pot over medium high heat. Add in sliced onion, garlic and chili. Cook for 3 minutes until soft.

Step 3
Add in curry powder and cook until fragrant, about 1 minute. Add tomato and butternut squash and cook for 2 minutes.

Step 4
Add in chicken broth. Bring to boil and lower the heat, cover and cook for 15 minutes or until butternut squash is soft.

Step 5
Add in prawns and cook for 3 minutes.

Step 6
Add in coconut milk, lime juice, lime zest. Stir to combine. Season with salt, sugar and black pepper.

Step 7
Spoon into serving bowl and top with chopped cilantro. Serve with rice or baguette.
