Step by Step Instructions

Step 1
Preheat the oven to 200°C. In a pot, add the water, butter, pinch of salt, cake flour and mix well. Turn the heat to medium low and cook the dough for about 5 minutes. Remove from the heat to let cool.

Step 2
Beat the eggs and add 4 times into the dough. Beat the dough every time until the egg mix into the dough until it turns into a batter.

Step 3
Place the batter in the piping bag and pipe into puff shape. Spray some water over the puff.

Step 4
Place in the oven and bake it for 12-15 minutes until golden brown, reduce the heat to 180°C and bake it for another 5-10 minutes.

Step 5
Turn off the heat and let it sit until the temperature is reduced.

Step 6
Remove the seed and mash the durian.

Step 7
Whisk the whipping cream and sugar until soft peak. Add the durian flesh and mix well.

Step 8
Cut a hole in the middle of the puff, pipe in the durian cream. Sprinkle with powdered sugar and ready to serve.
