Dried White Cabbage Scallop and Duck Gizzard Soup

Step 1
Soak, rinse and drain the dried white cabbage. Peel and cut the carrot into pieces. Soak and rinse the dried scallops, duck gizzards, sweet and bitter apricot. Soak the dried orange peel until soft.

Step 2
Bring a pot of water to boil. Add lean pork, blanch for 5 minutes and drain.

Step 3
In a pot, add dried white cabbage, carrot, dried scallops, dried duck gizzards, dried orange peel, sweet and bitter apricot, lean pork and water. Bring to boil on medium heat.

Step 4
Reduce to medium low heat. Cover the lid and cook for 1.5 hour.

Step 5
Remove the lid, season with salt and ready to serve.
