Dried Scallop Congee with Conch and Pork

Step 1
Rinse and cut the conches into pieces. Rinse the rice and drain. Marinate with salt and oil for 30 minutes.

Step 2
Bring a pot of water to boil and blanch the lean pork for 5 minutes. Drain and set aside.

Step 3
In another pot, cook conches, water and ginger on medium heat for 45 minutes.

Step 4
Add rice, dried scallops, lean pork. Bring to a boil on medium high heat and cook for another 10 minutes.

Step 5
Cover the lid, reduce to medium low and cook for 45 minutes.

Step 6
Open the lid. Take out the lean pork and slice. Put it back and stir well. Ready to serve.
