Dried Scallop and Pork Neck Bone Congee

Step 1
Rinse and drain the pork neck bones. Soak the dried scallops until soft. Reserve the water and set aside. Rinse the rice and drain. Marinate with salt and oil for 30 minutes.

Step 2
Marinate the pork neck bones with salt. In a pot of water, add pork neck bones and blanch them until the water is boiled. Drain and set aside.

Step 3
Bring the rice, dried scallops, scallop water and water to boil on medium heat.

Step 4
Cover the lid, reduce to medium low heat and cook for 1 hour. Stir occasionally to avoid overcooking.

Step 5
Season with some salt and ready to serve.
