Double-steamed Egg with Bonito and Dried Shrimp

Step by Step Instructions

Step 1
Stir-fry the dried small shrimps (without any oil) for 5-10 minutes.

Step 2
Beat the eggs and sieve to smoothen the egg wash.

Step 3
Add some water to the bonito stock and make a 300mL stock. Pour into the egg wash and transfer to a Chinese stew pot.

Step 4
Add dried small shrimps and cover the lid or plastic wrap.

Step 5
Bring a pot of water to boil and place the Chinese stew pot inside. Cook on medium heat fro 10 minutes. Remove from heat and let it rest for 5 minutes. Ready to serve.
