Double Broiled Fish Maw and Conch in Winter melon Bowl

Step 1
Soak the fish maw for 2 days and change water 2 times a day

Step 2
Remove the seed of winter melon and use the knife to cut a well shape. Remove the meat off the winter melon and left about 2cm thick of the meat

Step 3
Cut the removed winter melon meat into dices. Reserve for later use

Step 4
Cut the edge in flower. Settle the winter melon in the bowl

Step 5
Slice the ginger and cut the green onion into section

Step 6
In a pot, bring the water to boil. Add the ginger and green onion, blanch the fish maw for 15 minutes. Drain and set aside

Step 7
In another pot, bring the water to boil and blanch the conch for 10 minutes. Drain and cut in half

Step 8
Place the fish maw, conch, diced winter melon and Chinese cured ham in the winter melon bowl and add enough water to cover all the ingredients

Step 9
Place the winter melon bowl in Fissler Original Pro Collection stew pot with water

Step 10
Cover the lid and bring the water to boil. Place some ice on top of the lid. It can speed up the circulation of the steam inside the pot. Double broil for an hour over medium heat

Take the winter melon bowl out. Season with salt
