Double Boiled Winter Melon and Seafood Soup

Step 1
Soak the dried mushrooms, dried scallops and dried shrimps. Julienne the dried mushrooms and shred the dried scallops. Dice the chicken tenderloin and halve the straw mushrooms.

Step 2
Use the end part of the winter melon, cut off the tip so it can be able to stand.Seed the melon, remove the flesh and leave about 1” thick of the flesh. Make sure do not scrap it too deep. Dice the winter melon flesh.

Step 3
Marinate the chicken tenderloin with light soy sauce, sugar and Chinese cooking wine for 15 minutes.

Step 4
Place the winter melon bowl in a bowl and steam for 15-20 minutes.

Step 5
Bring the chicken broth to boil. Add the diced winter melon, dried mushrooms, dried scallops, dried shrimps and straw mushrooms. Bring to boil again.

Step 6
Cover the lid, reduce to medium low heat and cook for 15 minutes.

Step 7
Add shrimps, chicken tenderloin and cook for 5 minutes.

Step 8
Season with salt and ground white pepper. Pour the soup in the winter melon bowl. Ready to serve.
