Step 1
In a bowl, separate the egg whites and yolks. Do not need to use the yolks

Step 2
In another bowl, beat the egg white with the sugar, just whisk until it mix together

Step 3
To prepare the first layer of the milk skin. In the pot, add the milk and cook it to simmer, then remove from the heat

Step 4
Transfer to the bowl (you will see there is a layer on top of the milk)

Step 5
When the milk is cool down, pour the milk to the bowl

Step 6
use the chopstick to prevent the layer of the milk skin pour to the egg white mixture and mix well

Step 7
After that, pour the mixture back to the milk bowl. Then you will see the milk skin floating again

Step 8
Place the bowl in the shallow pot, and steam it for about 6 minutes
