Double-boiled Figs, Apple and Pork Shank Soup

Step 1
Peel and slice the ginger

Step 2
Cut the apple in pieces and remove the core

Step 3
Cut the figs in half

Step 4
Cut the pork shank into medium size. Bring a pot of water to boil and blanch the pork and sliced ginger for 10 minutes, drain and set aside

Step 5
In a double broiler, place the pork shank, apple, figs dried lily bulbs and Chinese cured ham

Step 6
Add enough water to cover the ingredients

Step 7
Double boil it for 2 hours over high heat

Step 8
Season with salt and serve
