Double Boiled Chicken Soup with Chinese Herbs

Cut the chicken thigh into large pieces. Blanch the chicken in a pot of boiling water

In a bowl, combine polygonatum, red dates, Chinese yam and which fungus. Add water to soak for 30 minutes

In a mixing bowl, combine blanched chicken thigh with Chinese cooking wine and salt

Transfer the ingredients into a Chinese stew pot. Cover the lid

Place the stew pot on a steam rack inside a large pot filled with 2-inches of water

Steam over water on medium heat for 90 minutes

Step 9
When ready, season with salt to taste
