Step 1
Preheat oven to 120℃. Spread olive oil on ribeye loin. Sprinkle black pepper and salt. Bake for 30 minutes.

Cut cherry tomatoes into halves; cut shallots into thin slices.

Rinse and juice the limes and set aside.

Step 4
On a heated pan, add 2 tbsp oil and melt the butter. Sear ribeye loin with garlic, thyme and rosemary under high heat until golden brown. Meanwhile, spoon the butter onto the ribeye loin. Slice the ri

Add cilantro, mint leaves, onion, cherry tomatoes and shallots.

In a bowl, melt brown sugar with 3 tbsp hot water. Stir in fish sauce, chili powder and lime juice. Pour to ribeye loin and stir well.
