Dark Beer Beef Stew with Apple and Potato Mash

Step by Step Instructions

Step 1
Cut the onion into pieces. Peel and cut the carrot into pieces. Slice the mushrooms. Slightly smash the garlic. Peel and dice the apples and potatoes.

Step 2
Cut the short ribs into chunks, pat dry and season with salt and black pepper.

Step 3
In 7L DOMINA VITAMIN Pressure Cooker, add in some olive oil and brown the short ribs. Take out and set aside.

Step 4
In the same cooker, sauté onion, carrots, mushroom and garlic for 2 minutes.

Step 5
Add in tomato paste, bay leaves and flour. Stir to combine and cook for another minute.

Step 6
Deglaze with stout beer and stir to make sure sauce is smooth and no lumps from the flour.

Step 7
Add in beef broth, short ribs, thyme and rosemary. Season with salt, sugar and black pepper.

Step 8
Close the lid. Turn the operating valve to the high pressure position. Cook on high heat until the pressure indicator rises and the valve starts to hiss. Reduce to medium heat and cook for 15 minutes. Release the steam and ready to serve.

Step 9
While the beef is cooking, in the 7L DOMINA VITAMIN Pressure Cooker, add in 2 cups of cold water. Place the apples and potatoes into the steamer basket. Put it into the pressure cooker.

Step 10
Close the lid. Turn the operating valve to the high pressure position. Cook on high heat for 8 minutes.

Step 11
Release steam. Transfer the apples and potatoes into a big bowl and mash. Season with salt, black pepper and butter. Stir in milk to make a smooth potato mash.

Step 12
Spoon apple and potato mash onto serving plate, ladle beef and sauce on top. Garnish with chopped parsley. Serve immediately.
