In a pot, add the lamb and tap water. Bring it to boil, remove the lamb, rinse and set aside.

Cut the daikon into pieces.

Cut the leeks in section. Slice the garlic and ginger.

In a pan, add some oil and sauté the leeks, ginger, garlic, star anise, cinnamon stick, bay leaves and lamb until golden brown. Remove the lamb and set aside.

Place the spices in the fish bag and tie it tight.

In a pot, add the lamb, spices bag, red dates, rock sugar, light soy sauce, Chinese cooking wine. Add enough water to cover the ingredients and bring it to boil over high heat. Reduce the heat to low,

Add the daikon and cook for another 30 minutes until the daikon is tender. Add the wolfberries and cook for another 10 minutes. Season with salt.

Remove the spices bag. Sprinkle with cilantro and ready to serve.
