Curry Vegetarian Burger

You can make your own vegetarian burger with high fiber and protein. You will not be losing any nutrition even when you are on diet.

Step 1
In a bowl, combine the sour cream, curry powder, 1/4 tsp sea salt, 1/2 lime juice and mix well.

Step 2
Rinse and drain the chickpeas. Cut the green onions into sections. Place the chickpeas, green onions, pinch of sea salt and blend into a paste.

Step 3
Thin slice the baby radish, cucumber and soak in water. Chop the cilantro and shred the carrot.

Step 4
Combine the chickpeas paste, cooked basmati rice, cilantro, carrot, breadcrumbs, 1 tbsp curry sour cream and mix well.

Step 5
Form the chickpeas mixture into patties. Lay the patties on the baking tray and refrigerate for 20 minutes.

Step 6
In a pan, add some olive oil on a medium heat. Cook the curry burger until golden brown on both sides.

Step 7
In a bowl, toss together the arugula, cucumber, baby radish, some olive oil, remaining lime juice, sea salt and black pepper.

Step 8
Serve the curry burger with the vegetable salad, drizzle with the curry sour cream and ready to serve.
