Curry Coconut Chicken and Mango Pizza

Tortilla is a thin flatbread made from wheat flour. It is a good substitution as a pizza dough. This recipe is full of Thai flavor with Thai red curry, lime leaves and juice.

Step 1
Slice the onion and cut the chicken into strip

Step 2
Peel and dice the mango

Step 3
In a pan, add the coconut oil on a medium heat. Sauté the onion until fragrant, add the chicken and cook until golden brown

Step 4
Add the Thai red curry, coconut milk, kaffir lime leaves, fish sauce and palm sugar. Cook until the palm sugar has dissolved

Step 5
Add the lime juice, mango and mix well

Step 6
Spread the plain yogurt and curry chicken mixture on the tortilla. Sprinkle with the coconut flake

Step 7
Transfer to the baking pan and bake it until slightly golden brown
