Curry Chickpea over Rice

Step 1
Rinse and drain the chickpeas. Use a blender and puree the cherry tomatoes. Set aside.

Step 2
Dice the onion, mince the garlic, chop the cilantro and set aside.

Step 3
In a pan, add some oil. Sauté the garlic, ginger, onion until golden brown.

Step 4
Add the chickpeas and quick stir for 2 minutes. Add the chicken broth, cherry tomato puree, tomato paste and bring it to simmer.

Step 5
Add the Garam Masala, curry powder and cook until thickened. Season with sugar and sea salt.

Step 6
Serve with basmati rice, garnish with cilantro and ready to serve.
