Step 1
Shred the green onions.

Step 2
Chop the red chillies.

Step 3
Wash and dry the cucumbers. Cut into 3 cm length pieces. Cut into half and remove the seeds.

Step 4
Blanch the cucumber cups in boiling water on high heat, about 2 minutes. Transfer to cold water, then drain dry.

Step 5
In a sauté pan, heat up some oil on high heat. Add minced pork to sauté until medium, about 2 minutes.

Step 6
Add soy sauce, salt and Chinese cooking wine then sauté until fully cooked.

Step 7
Add a spoonful of pork mixture inside the cucumber cups.

Step 8
Top with red chill and green onions.
