Creamy Cheesy Shio Koji Chicken and Mushroom

Though Shio Koji is a Japanese seasoning, you may use it in Western cuisine. Mixing it with milk and cheese to cook chicken thighs smooth and juicy.

Step 1
Trim the shimeji mushroom.

Step 2
Cut the shitake mushroom, onion and carrot into pieces.

Step 3
Cut the chicken into pieces and marinate with shio koji and black pepper for 30 minutes.

Step 4
In a pan, add some oil on a medium high heat. Add the chicken and cook until golden brown. Set aside.

Step 5
In the same pan, sauté the garlic, onion and carrot until fragrant.

Step 6
Add the chicken, shimeji mushroom, shitake mushroom and stir well.

Step 7
Add the sake, milk and bring it to simmer. Cook until the chicken is fully cooked and the vegetable is tender.

Step 8
Add the cheese and cook until the cheese has melted.

Step 9
Season with some black pepper, sprinkle with chopped cilantro.

Step 10
Ready to serve.
