Courtesan au Chocolat

In the movie "The Grand Budapest Hotel", the dessert “Courtesan au Chocolat” gives lots of people an impression and is the pastry chef specifically designs for this movie. It is the combination of different sizes of cream puff. A bite size puff fill with packed filling, it makes everyone loves it.

Step by Step Instructions

Step 1
Preheat the oven to 210ºC.

Step 2
In a pot, add the milk, water, sugar, salt and butter and bring it to boil.

Step 3
Add the cake flour and reduce the heat to low. Use the spatula, quickly mix until the dough until smooth and no lumps.

Step 4
Place the dough in the mixer and mix until the dough is completely cool. Slowly add the eggs and mix together.

Step 5
Place the baking paper on the baking tray.Prepare the piping bag and piping tip. Place the batter in the piping bag and pipe the large, medium and small sizes on the baking paper.

Step 6
Place in the oven and bake it for 30 minutes. Reduce the temperature to 160ºC and bake for another 10 minutes or until golden brown. Remove from the oven and set aside.

Step 7
Beat the egg yolks and the sugar until light yellow.

Step 8
Add the sieved cake flour and coco powder.

Step 9
In a pot, add the milk and bring it to boil and slowly add into the egg yolk mixture. Whisk until combine.

Step 10
Add the mixture back to the pot and slightly reheat, keep stir to prevent stick in the bottom.

When the mixture has thickened, add the butter and cook until melt and whisk together. Transfer to the container and place in the ice bath to cool down.

Meat the coco butter and pour it in the bowl with the white chocolate.

Double boil the white chocolate mixture until melted and divided into 3.

Add the food coloring into the 3 white chocolate mixtures and mix well.

Place the chocolate custard filling in the piping bag. Poke a small hole in the bottom of the puff and fill in the chocolate custard.

Add the glaze over the puff, each size of the puff use one color glaze. Put the 3 different sizes together before the glaze has been set and ready to serve.
