Step by Step Instructions

Step 1
Ginger, sliced 30g spring onion, red dates, dried mushrooms

Step 2
Lean pork and grouper

Step 3
Soak and slice mushrooms into small strips, slice pork into small strips

Step 4
Soak dates and cut into small pieces

Step 5
Combine dates, mushroom and pork in a mixing bowl. Marinade pork mixture with sugar, 1 tablespoon soy sauce and corn starch for 10 minutes

Step 6
Score fish several times on each side for easy cooking

Step 7
Place grouper onto spring onion and spread marinated pork mixture on top of fish

Step 8
Julian ginger and sprinkle onto fish. Steam over high heat for about 12 minutes until grouper is cooked

Step 9
Preheat Vegetable oil until smoke appears

Step 10
Drizzle onto top of cooked fish and sprinkle extra spring onion

Step 11
Drizzle with soy sauce
