Conpoy and Chicken Congee

Cantonese is good at making congee. And among all, Chicken Congee is stunning. The combination of chicken and congee makes a good meal.

Step by Step Instructions

Step 1
Soak the conpoy in water until soft and shred.

Step 2
Rinse the rice and add 1 tsp oil, let it sit for 30 minutes.

Step 3
Cut the chicken into pieces and marinate with Chinese cooking wine, light soy sauce and white pepper for 20 minutes.

Step 4
In a pot, bring 1.5L water to boil. Add the rice and the conpoy with liquid. Bring it back to boil and cook for 10 minutes.

Step 5
Reduce the heat to medium low, cover the lid and cook for 30 minutes (stir every 10 minutes to prevent stick in the bottom).

Step 6
Turn the heat back to medium high and add the chicken and ginger and cook for another 15 minutes or until the chicken is cooked.

Step 7
Season with salt and white pepper. Sprinkle with green onion and ready to serve.
