Peek lotus root and chop it. Then blanch

Step 2
Mash green onion, ginger, garlic. Slice green and red chili.

Step 3
Put chopped lotus root, salt, 10g of mashed ginger, 2 cloves of garlic in a closed container. Cover it and shake it to mix well the ingredients then store in fridge to marinate for 20 to 30 minutes.

Step 4
Mix well mashed green onion, soy sauce, ginger, mashed garlic, cooking wine, sesame oil, chopped bell pepper sauce, sugar, green chili, red chili, vinegar and pepper to make the sauce.
