Cold Konjac Noodles with Vegetables

Konjac is a low-calorie and high-fiber food. Adding different colourful vegetable on top with appetizing yuzi and sesame salad dressing, this dish is easy and healthy!

Step by Step Instructions

Step 1
Julienne the red cabbage, Japanese cucumber and carrot. Halve the cherry tomatoes and set aside.

Step 2
Beat the egg. In a pan, add some oil on medium heat. Add the egg wash and cook until done. Julienne and set aside.

Step 3
Bring a pot of water to boil. Add Konjac noodles and cook for 1 minute. Transfer to ice water and let cool. Drain and transfer to a plate.

Step 4
Combine the sesame salad dressing and yuzi vinegar.

Step 5
Layer the Japanese cucumber, carrot, egg, red cabbage and cherry tomatoes on top of the konjac noodles. Drizzle the yuzi sesame salad dressing over. Read to serve.
