Coix Seed and Mung Bean Sweet Soup

Mung beans and coix seeds are very common in recipes to expel dampness. Adding dried orange in this sweet soup gives a special flavor.

Step 1
Rinse the mung beans, raw coix seeds and dried lily bulbs. Soak for 1 hour, drain and set aside.

Step 2
Soak the dried orange peel and scrape off seed pouch.

Step 3
Cook the mung beans, raw coix seeds, lily bulbs, dried orange peel, water and bring to boil. Cover the lid. Reduce to medium low heat and cook for 1 hour.

Step 4
Add cane sugar and cook until melted. Mix well, remove from heat and set for 1 hour. Ready to serve.
