Step 1

Combine olive oil and honey.

Separate egg yolk and egg whites.

Beat the egg yolk. Beat the egg whites with 130g sugar until white and fluff

Add the beaten egg yolk gradually to the egg white mixture. Mix well.

Step 5

Add flour, olive oil and honey mixture, coffee powder. Mix again.

Step 6

Pour the batter into the baking tray. Flatten until smooth.

Step 7

Transfer the preheat oven (180 degree Celsius) to bake for 13 minutes. Remove and transfer to a fridge to cool completely.

Step 8

Prepare fillings. Combine the fresh cream and 20g sugar to beat until stiff.

Step 9

Spread the filling on top of the sponge cake. Place sliced bananas on top. Roll it up. Slice and serve.
