Classic Beef Stroganoff

Step by Step Instructions

Step 1
Pat the meat dry with paper towels after slicing. Season with salt and black pepper.

Step 2
Heat butter and olive oil in a frying pan over high heat. Sauté the beef until half-cooked and transfer to a plate. Set aside.

Step 3
In the same pan, add a bit more oil and sauté sliced onions, garlic and mushrooms until soft, about 3 minutes.

Step 4
Add in Dijon mustard and paprika powder. Mix well. Add in white wine and let cook for 1 minute.

Step 5
Add in broth and bring to a boil. Turn down heat and cook for 5 minutes.

Step 6
Add the beef back into the pan and let simmer over low heat until meat is heated through.

Step 7
Turn off heat and stir in sour cream. Season with salt and pepper.

Step 8
Spoon over cooked rice and sprinkle with chopped parsley and more paprika powder, if desire. Serve with rice.
