Christmas Maple Cranberry Muffins

Step by Step Instructions

Step 1
Preheat the oven to 180°C. Line muffin tins with paper muffin cups. Set aside.

Step 2
Using a whisk or an electric mixer, cream together 2 eggs and the brown sugar until mixture turns to a pale brown colour, about 3 minutes.

Step 3
Add milk, oil, maple syrup and grated fresh ginger to the egg mixture. Stir again to combine all the wet ingredients together.

Step 4
In another bowl, mix all the remaining dry ingredients and add in egg mixture. Stir with a spatula until will mixed together. Don’t worry if there are some lumps in the batter.

Step 5
Fold in the cranberries. Divide the batter into the prepared muffin tins and bake until golden brown and cooked through, about 12-15 minutes.

Step 6
Take the muffins out of the oven and let it cool in the tins for 5 minutes before taking them out. Let cook for another 15 minutes on a cooling rack and dust with icing sugar.
