Chorizo Stuffed Mushrooms

Step 1
Preheat the oven to 200°C. Place a baking paper on a baking tray and set aside.Remove the stems of the mushrooms. Dice the onion and chorizo. Set aside.

Step 2
Blend onion, chorizo, mushroom stem and cream cheese with a blender. Transfer to a large bowl.

Step 3
Add breadcrumbs and parsley. Mix well to form batter.

Step 4
Fill the mushroom with the batter. Sprinkle with Mozzarella cheese and black pepper.

Step 5
Bake for 12-15 or until golden brown. Ready to serve.
