Pre heat oven to 210 degrees

Boil milk, water, sugar, salt and butter

Add cake flour and turn it to low heat

Use scraper to stir them well quickly, make sure the dough is smooth

Put the dough into dough mixer, mix it with mid-speed. When the dough is cool down, add eggs and stir them.

Put a baking sheet on the tray

Put the dough into a pastry bag, fitted with a large zigzag tube, pipe out dough in finger-shaped

Bake for 20 minutes, turn the oven to 160 degree and bake for another 10 minutes. When the surface is hard and in golden color, the pastry is done.

Blend egg yolks and sugar to white color

Sieve cake flour

Sieve cocoa powder

Add hot milk into the egg yolk mixture slowly, then stir them immediately

Pour the mixture in a pot and heat it, use a scraper keep stirring, to avoid the mixture stick on the pot

When the mixture is thickened, add and melt the butter.

Put the pot over iced water to cool down

Place the ganache in the pastry bag, make 3 holes on the puff

Squeeze the ganache in

Melt white and dark chocolate oven a pot of hot water

Dip the filled puff in dark chocolate sauce.
