Chinese Yam Millet and Quinoa Porridge

Step 1
Soak and rinse the millet and quinoa. Peel and grind the Chinese yam. Dice the corn and keep the core.

Step 2
In a pot of water, add corn core and bring to simmer. Remove the corn core.

Step 3
Add millet, quinoa and corn kernel. Keep stirring and cook on medium high heat for 30 minutes or until thickened.

Step 4
Reduce to low heat. Add Chinese yam and mix well. Bring to boil.

Step 5
Season with some salt and ready to serve.
