Chinese New Year Braised Pork Knuckle

Braised Pork Knuckle is a must-have Chinese New Year dish in Southern China because it has a good meaning. It takes some time to cook a tender pork knuckle but it is worthy when you taste it.

Step 1
Clean the pork knuckle and make a cut between the bones.

Step 2
Peel and slice the ginger. Cut the leek into sections. Soak the red date in water. Rinse the wolfberries.

Step 3
In a pot, add the chicken broth, pork knuckle and bring it to boil over high heat. Reduce the heat to low, cover the lid and cook for 30 minutes.

Step 4
Remove the bone and place it back in the broth.

Step 5
Use half of the dark soy sauce to brush over the pork knuckle skin.

Step 6
In a pan, add some oil and sear the boneless knuckle until golden brown.

Step 7
Place the boneless knuckle back to the chicken broth.

Step 8
In a pan, add some oil and sauté the leeks, ginger, star anise, cinnamon and bay leaves.

Step 9
Add some chicken broth, rock sugar, remaining dark soy sauce and salt. Bring it to boil over high heat.

Step 10
Pour the ingredients into the pot with the knuckle. Add the red dates. Bring it to boil over high heat. Reduce the heat to low and cover the lid. Cook for at least 1 hour until the knuckle is completely cooked and tender.

Add the wolfberries and cook for another 5 minutes.

Step 12
Remove the pork knuckle and steam it for 20 minutes. Transfer to the plate.

Strain enough broth to a pot and bring it to boil. Add the corn starch water, salt and cook until the sauce has thickened.

Pour it over the pork knuckle and ready to serve.
