Chinese Lotus Root Donuts looks a bit like shredded radish cake, but with lotus root. This is a very popular breakfast for Wuhan people and also nice choice for tea time. The donuts are easy to carry for picnic too!

Step 1
Soak the rice and soybean for 6 hours.

Step 2
Clean and peel the lotus root, smash it.

Step 3
Cut green onion and ginger into strips.

Step 4
Blend rice, soybean and lotus root into mash. Add green onion, ginger and salt, mix it well.

Step 5
Add the mash in the mold and deep fry in the pot with high heat.

Step 6
Deep-fry until one side of the donut turns brown, remove from the mold, fry until golden brown and serve.
