Chilled Soba Noodle with Tomato Infused Plum Green Tea

Step by Step Instructions

Step 1
Place the green tea bag and preserved sweet plum in hot water to release flavor, set aside and let cool.

Step 2
Score the cross at the bottom of the tomato and place in boiling water and cook it for 1 minute. Transfer to cold water to let cool.

Step 3
Peel the tomato skin and place in the green tea mixture. Refrigerate for 4 hours.

Step 4
In a pot, bring the water to boil and cook the soba noodle until soft. Transfer to cold water to let cool and plate.

Step 5
Pour the green tea plum juice with the soba noodle and place the tomato on top. Ready to serve.
