Chilled Sea Cucumber and Black Fungus in Thai Style

Step 1
Soak the black fungus, remove the stems and blanch. Transfer to ice water, let cool and julienne. Remove the seeds of red bird chili and dice. Chop the cilantro and garlic. Cut the green onion into section. Set aside.

Step 2
Clean the soaked sea cucumbers and slice thinly.

Step 3
Bring some water to boil. Add sea cucumbers, Chinese cooking wine, ginger and green onion. Blanch the sea cucumbers for 2-3 minutes. Transfer to ice water, let cool and drain.

Step 4
Mix together fish sauce, lemon juice, sugar, water, garlic and red bird chili.

Step 5
Mix together sea cucumbers, black fungus, cilantro and sauce. Transfer to a plate and ready to serve.
