Chilled Poached Chicken Wing in Sichuan Style

This Sichuan sauce is very spicy and tempting. The texture of chicken wings is tender and juicy.

Step by Step Instructions

Step 1
Cut the green onions into sections. Mince the garlic. Chop the red bird chilies and cilantro. Rinse and pat dry the chicken wings and marinate with salt for 10 minutes.

Step 2
Bring some water to boil. Add ginger, green onions, Sichuan pepper, star anises and chicken wings. Cook on medium heat for 5 minutes. Remove from heat, cover the lid and set for 15 minutes.

Step 3
Transfer to ice water and let cool. Drain and set aside.

Step 4
In a pan, heat the oil on medium heat. Remove from heat, mix together with ground Sichuan pepper and garlic.

Step 5
Add light soy sauce, chili oil, black vinegar, sugar, red bird chilies, grated ginger and mix well.

Step 6
Pour the sauce on the chicken wings. Sprinkle with cilantro and ready to serve.
