Chilled Mango Sago Cream with Grapefruit Pudding

Step by Step Instructions

Step 1
Diced the mango into small cubes

Step 2
separate the meat of the grapefruit

Step 3
Bring water to boil and add the tapioca cook for 10 minutes, then turn off the heat and cover for another 5 minutes

Step 4
In a pot bring 100mL water to boil and add rock sugar. Turn off the heat and add gelatin until dissolve, cool down and aside

Blended half of the mango meat until smooth

Step 6
then combine with milk and coconut milk

Step 7
Combine sugar syrup, mango mixture and grapefruit meat together and mix well

Step 8
Add about 1 tsp diced mango in the silicon mold

Step 9
pour in the mango grapefruit mixture about ¾ full of the mold

Step 10
add about 1 tbsp of the tapioca

Step 11
Place in the fridge for about 2-3 hours or overnight until set

take out the pudding off the mold and serve
