Chilled Eggplant with Spicy Garlic Sauce

Eggplant cools your body, so it is the best vegetable to eat in summer. As it tastes bland on its own, it is better to cook with spicy garlic sauce, which gives eggplants a great flavour.

Step by Step Instructions

Step 1
Prepare the garlic sauce. Mince the garlic and chop the red bird chili.

Step 2
In a pan, add the chili oil on a medium heat. Sauté the garlic and red bird chili until fragrant.

Step 3
Add the sweet soy sauce, black vinegar, sugar, sesame oil and bring it to simmer.

Step 4
Turn off the heat and let cool. Add the cilantro and mix well.

Step 5
Clean and cut the eggplant into pieces. Sprinkle with some salt and marinate for 5 minutes.

Step 6
In a pot, bring the water boil and add the white vinegar. Blanch the eggplant for 5 minutes.

Step 7
Transfer to ice water and let completely cool. Drain and transfer to the plate.

Step 8
Pour the spicy garlic sauce on the eggplant, sprinkle with green onion and white sesame seed. Ready to serve.
