Chili Pepper and Preserved Egg

This Sichuan appetizer is very popular among the Hongkongese. You may cook it at home easily as well! Sauté the green chili pepper and garlic and mix with different kinds of seasoning to deliver the same taste as you find in restaurants.

Step by Step Instructions

Step 1
Seed and chop the green chili pepper. Chop the garlic and cilantro. Set aside.

Step 2
Shell the preserved eggs and cut into wedges. Layer on a plate.

Step 3
Mix together light soy sauce, black rice vinegar, chili oil, Sichuan peppercorn oil and sesame oil.

Step 4
In a pan, add some oil on medium heat. Add garlic, green chili pepper and sauté until fragrant. Add rice wine and mix well.

Step 5
Reduce to medium low heat. Add light soy sauce, sugar and cook until sugar melted.

Step 6
Remove from heat and let cool. Drizzle over the preserved eggs. Sprinkle with cilantro and ready to serve.
