Step 1
Clean the fish and cut in half, use the knife slightly pound the side of the fish

Use Chinese cooking wine, salt and pepper marinate the fish for 10 minutes

Slice the ginger and garlic, cut the green onion into section

In a pan, add oil on a high heat

Step 5
Add Chopped chili, white pepper, salt and sugar to mix together, cover the lid and cook until the water come out from the chili

Pout the chili mixture over the fish

Step 7
Steam the fish over water for about 10 minutes or until its cooked, set aside

Step 8
In a pan, heat the vegetable oil and chili oil, add the remaining ginger, garlic and green onion

Step 9
Pour it over the fish

Ready to serve
