Chicken Soup with Cordyceps Flower, Dried Chinese Yam and Wolfberries

Step by Step Instructions

Step 1
Clean and cut the chicken into pieces. Blanch, drain and set aside.

Step 2
Soak the cordyceps flower for 10 minutes, drain and set aside. Rinse the wolfberries, drain and set aside. Peel and slice the ginger.

Step 3
In a pot, add some oil and sauté the ginger until fragrant. Add the chicken and cook until golden brown.

Step 4
Add the Chinese yam, cordyceps flower, enough water and bring it to boil over high heat. Reduce the heat to low, cover the lid and cook for 2 hours.

Step 5
Add the wolfberries and cook for another 15 minutes.

Step 6
Season with salt and ready to serve.
