Chicken Salad with Orange Marmalade Vinaigrette

Chicken Salad with Orange Marmalade Vinaigrette
Step by Step Instructions

Step 1
In a mixing bowl, mix together the orange marmalade and apple cider vinegar.

Step 2
Slowly add the extra virgin olive oil in a stream and whisk until the vinaigrette is emulsified.

Step 3
Season with salt and black pepper. Refrigerate for an hour.

Step 4
Preheat the oven to 180ºC. Season the chicken with salt, black pepper and paprika.

Step 5
In a pan, add some oil on a medium heat. Sear the chicken until golden brown on both sides and transfer to the baking tray.

Step 6
Place the chicken in the oven and cook for 10 minutes or until the chicken is fully cooked. Let cool and cut into dice.

Step 7
In a mixing bowl, mix together the romaine lettuce, tomato, red onion, yellow bell pepper, chicken, orange segment, mango, red kidney bean and cilantro.

Step 8
Drizzle with the orange marmalade vinaigrette and toss to coat. Ready to serve.
