Chicken and Egg Rice Bowl in Japanese Style

Step 1
Slightly beat the egg. Cut the chicken thigh meat into pieces. Julienne the onion. Dice the green onions and set aside.

Step 2
Marinate the chicken thigh meat with salt and ground white pepper for 10 minutes.

Step 3
In a pan, add Japanese soy sauce, mirin, sake, sugar, bonito powder and water. Bring to boil on medium heat.

Step 4
Add onion and cook on medium low heat for 3 minutes.

Step 5
Add chicken thigh meat and bring to boil on medium heat. Cover the lid, reduce to medium low heat and cook for 3-4 minutes or until cooked.

Step 6
Add egg wash, cover the lid and cook for 1-2 minutes or until set.

Step 7
Place on the rice. Sprinkle with nori flakes and ready to serve.
