This chestnut soup is the favorite comfort food for foreigners during autumn and winter time. The smooth texture of the Chestnuts, apples and onions which blend together, goes together with the bacon, it gives the warm feeling of the autumn and winter days.

Step by Step Instructions

Step 1
Chop the onion, carrot and celery into small cubes

Step 2
Dice the apple

Step 3
Cut the bacon into small pieces

Step 4
In a dry pan, add the bacon on a medium heat and cook until the bacon release the fat and crispy. Transfer the bacon to the kitchen paper and save the bacon fat in the pan

Step 5
In the same pan, add the chopped onion, carrot, celery and sauté the vegetable until slightly tender

Step 6
Add the apple, chestnut, thyme leaves and cook for 8-10 minutes

Step 7
Add the vegetable brothand bring it to boil. Reduce the heat to medium and cook it for 30 minutes until all the vegetable are soften

Use the blender and blend the soup until smooth

Step 9
Season with salt and black pepper

Step 10
Transfer to the bowl, sprinkle with the crispy bacon and chopped parsley. Ready to serve
