Chaozhou Marinated Duck Legs

Marinated duck leg is one of the iconic dishes in Chaozhou cuisine. With different spices, cook delicious marinated duck legs!

Step by Step Instructions

Step 1
Slice the galangal, thin slice the cabbage, dice the red bird chili and set aside.

Step 2
Rinse and drain the duck legs. Rub the duck legs with some salt and marinate overnight. Set aside.

Step 3
Place the garlic, shallots, sliced galangal, dried orange peel, star anise, fennel, black pepper, coriander seed powder and grounded cinnamon into a filter bag.

Step 4
In a pot, add some water, duck legs, filter bag, dark soy sauce, light soy sauce, chicken broth and bring it to simmer. Reduce the heat to medium low, cover the lid and cook for 1.5 hours.

Step 5
Prepare the dipping sauce. Mix together the minced garlic, diced red chili, honey, white vinegar and chopped green onion. Set aside.

Step 6
Transfer the duck legs and sliced cabbage onto a plate. Sprinkle with coriander. Serve with the dipping sauce.
