Cauliflower and Turmeric Soup

Step by Step Instructions

Step 1
Heat a big pot over medium high heat and add in olive oil. Sauté chopped onion and garlic until soft.

Step 2
Add in grated ginger, bay leaf and turmeric powder. Stir will to combine and let cook for 1 minute.

Step 3
Add in potatoes and cauliflower. Stir well and cook for another minute.

Step 4
Add in chicken broth. Bring to a boil and lower the heat to medium-low heat, cover and let soup simmer for 20 minutes or until vegetables are soft.

Step 5
Turn off heat and take out bay leaf. Blend the soup until soup in a blender or handheld blender.

Step 6
Season with salt and black pepper. If the soup is too thick, add a little more broth.

Step 7
Spoon into serving bowls and garnish with chopped chives.
