Black beans are rich in proteins and helps to increase our memory retention. Preparing some candied black beans as snacks is definitely a great idea!

Step 1
Rinse the black beans and soak in 500mL water overnight and set aside.

Step 2
Pour black beans together with the water in a pot. Add Japanese soy sauce, black sugar and mirin. Bring to boil on medium heat.

Step 3
Cover the lid and cook for 45 minutes on medium low heat.

Step 4
Remove the lid, add maltose sugar and cook until thickened. Transfer to a plate and ready to serve.
