Step by Step Instructions

Step 1
Bring a pot of water to boil. Add red dates and cook on medium heat for 15 minutes.

Step 2
Cover the lid and cook on medium low heat for another 30 minutes. Remove from heat and let it sit for 30 minutes.

Step 3
Mix together 400mL red date water and black sugar. Cook on medium low heat until black sugar melted.

Step 4
Puree the red dates. Add water if necessary and sieve.

Step 5
Mix together 600mL red date mash and black sugar red date water.

Step 6
In a bowl, add tapioca starch, glutinous rice flour and water chestnut flour. Add red date mixture bit by bit. Stir until smooth and sieve.

Step 7
Brush a layer of oil on the molds. Pour the batter over and shake slightly to remove gas bubbles. Cover with plastic wrap.

Step 8
Steam on medium heat for 20-25 minutes. Remove from the molds and ready to serve.
